RASPBERRY AND LEMON LOAF: Guilt free baking for non-bakers

Get a sweet, simple and sugar-free slice of heaven with this easy but impressive bake that's perfect for your diet plan .
I used to hate baking for two reasons. 1) I am rubbish at it and 2) I gain 17 stone just looking at a cake. This recipe is the perfect solution- it's fool proof AND guilt free!
INGREDIENTS:
250g of fat free natural/ greek yogurt
150g of self raising flour
1tsp of baking powder
1 tsp of vanilla essence
10tbsp of granulated sweetener
The zest of 1 lemon
3 medium eggs
A 'big handful' of frozen raspberries (or just as many as you want)
METHOD:
Preheat your oven (180 fan/ 200 ordinary oven/ gas mark 4)
Add the yogurt, lemon zest, eggs and vanilla essence to a bowl and mix thoroughly (I use an electric whisk to get the mix ultra smooth and fluffy)
Sift the granulated sweetener, baking powder and self-raising flour into the mixture along with the berries and gently fold together.
Once the mixture is thoroughly, prepare a loaf tin. I had no baking parchment so I used low calorie spray oil and foil to keep calories as low as possible- but parchment or greasing will also work.
Pour the mixture into the baking tin and place in the center of the oven and leave to bake for between 35-45 minutes- until a knife comes out clean from the batter.
OPTIONAL: Use a fork to prick holes in the top of the loaf and drizzle on your topping of choice (e.g skinny syrup, honey, lemon juice etc)
Wait until the loaf has cooled and remove from the tin and cut yourself a big slice!
OPTIONAL: Hide the rest from your boyfriend...
The base mixture of this loaf (without the lemon and the berries) can be customised to your favourite flavours. Next on my list- banana and chocolate!
