A TASTE OF SUMMER: Rainbow Skewers and Sticky Potatoes

A colourful, tasty and satisfying summer sensation that's brilliant for the Great British Barbecue (or just the oven!) .

INGREDIENTS
CHICKEN SKEWERS:
Skinless and boneless chicken (I used breast)
SpiceNtice Sriracha Seasoning OR Paprika, Chilli Powder, Chip Seasoning and Garlic Granules
Peppers
Courgette
Soy Sauce
STICKY POTATOES:
New potatoes/ Salad Potatoes
Chip Seasoning (there are loads of brands out there- all pretty much the same)
Honey
Garlic granules
ight Soy Sauce
Salt and Pepper
TZATSIKI:
Fat free Yoghurt
Fresh Mint
Salt and Pepper
Lemon
Garlic Granules
METHOD:
CHICKEN:
Preheat your oven to 180 degrees (fan oven).
Cut the chicken into small chunks, coat the chicken with your chosen marinade and put in the fridge (the longer you can leave to marinade the better- but if you're in a rush, give i at least 10 mins). *I used the SpiceNtice Sriracha Seasoning, but you could make your own version by mixing equal measures of chilli powder, paprika, chip seasoning and garlic (or go wild and choose your own flavour).
Cut your peppers and courgettes into similar size chunks to the chicken.
Thread the chicken, courgettes and peppers onto BBQ skewers in an alternating pattern.
Place the kebabs onto a baking tray sprayed with low calorie spray oil and place in the oven for around 20-25 minutes (turning occasionally).
STICKY POTATOES:
Cut the salad potatoes in half and place in a pan of boiling water for around 10 minutes (or until they are soft enough to stab with a fork).
Drain the potatoes and place in a casserole dish.
Add 1tbsp of honey, 2tbsp soy sauce, 1 tbsp of garlic granules and a generous amount of chip seasoning to the potatoes and mix until they are thoroughly coated.
Place in your preheated oven for 20 minutes.
TZATSIKI:
Take a around 5 fresh mint leaves and cut as finely as possible.
Mix the mint with 3tbsp of fat free natural yoghurt, 1/2 tsp of garlic granules and a squeeze of lemon.
Season with salt and pepper to taste and drizzle across your kebabs and side salad.
Although I cooked all this in the oven, I also think that all these components would be ideal to bring along to a barbecue (now Boris is allowing us to play out!)- who said slimming couldn't be social!
